I think that's a little like comparing a bag of apples (including the bag) to an orange segment.
OpenEmbedded usually uses the Linux kernel (can it use others?) at it's heart, so the question how would you compare Linux to eCos would probably be better. However even that would be very difficult and subjective to answer without knowing much more about what you want to do and with what hardware.
I'm not sure this is the right forum to have this kind of discussion (though I may be wrong).

eCos is more for small completely embedded real-time applications (as far as I know). Linux is not so real-time (in the hard real-time sense) though can potentially support a much richer interface and wider software stack.
